Acorn Squash Bars

These bars are very moist and dense. The texture is a blend of a bread and cake. We think they would also make great muffins.  Serve with a drizzle of caramel and vanilla ice cream.

Ingredients

large acorn squash, cooked and pureed

½ cups brown sugar
3/4
cup unsweetened applesauce
4
eggs
1
tsp. vanilla
1/2
tsp. salt
1
cup flour
1
cup whole wheat flour
2
tsp. baking powder
1
tsp. baking soda
1
tsp. cinnamon

Directions

Preheat oven to 350 degrees.

Cut acorn squash in half and scoop out seeds.  Place cut side up in a baking dish, add one cup of water to the dish and roast in oven for about one hour or until fork tender.  Set aside to cool.  Once cool, scoop out flesh and process in a food processor until smooth.

Lightly grease a 9 x 13 cake pan.  In a bowl mix together squash, sugar, applesauce, eggs, vanilla and salt. Add flours, baking powder, baking soda and cinnamon.

Pour into pan and bake for 30-40 minutes or until toothpick inserted in center comes out clean.
