Apple-Onion Bacon Bites

This is an easy savory apple appetizer that is sure to please any crowd.  Top with a slice of green onion for garnish.

Ingredients

pkg. mini fillo shells (15 total)

Tbsp. butter
1
cup sweet onion, diced
1
cup Granny Smith apple, peeled and diced
1
½ tsp. light brown sugar
Salt and pepper, to taste
1/2
tsp. balsamic vinegar
4
slices bacon, cooked crisp and crumbled
1/2
cup 6 cheese Italian blend, shredded

Directions

Remove fillo shells from package and place on baking sheet to cook crisp according to package directions.

In a medium sauté pan, melt butter over medium heat; add onion, and sauté 5 minutes. Add apple, light brown sugar, salt and pepper to taste, and cook, stirring occasionally, 3 minutes or until apples are crisp tender. Remove from heat; stir in balsamic vinegar, bacon and ¼ cup of the cheese.  Spoon mixture into fillo cups; top with remaining cheese and serve.
