Apple Salad with Cranberry Vinaigrette

This is a delicious combination of ingredients for a salad in the Fall.  The dressing recipe is from Southern Living, October 2011.  I also recommend trying this dressing with pork or chicken.

Ingredients

Salad:
Salad greens (arugula and spinach) for 4 servings

slices bacon, cooked and crumbled

cup chopped pecans, toasted
1
large NC Gala apple, sliced ¼ inch thick
1
cup halved seedless red grapes
4
oz. crumbled blue cheese
Cranberry Vinaigrette:
1
cup canned whole-berry cranberry sauce
1
tsp. orange zest
1/2
cup fresh orange juice
1/4
cup balsamic vinegar
1
Tablespoon light brown sugar
2
tsp. grated fresh ginger
1/2
tsp. salt

Directions

Salad:

Place salad mixture on plates and top with bacon, pecans, apple slices, grapes and blue cheese. Then top with vinaigrette.

Cranberry Vinaigrette:

Whisk together until blended and smooth.
