Atlantic Beach Pie

This recipe has been featured many different times on television or in magazines and newspapers. I haven’t ever made it and wanted to give it a try. Mary Laymon sent me this copy and I must say: Delicious!! Perfect for summer!

Ingredients

Crust:
1
½ sleeves saltine crackers

Tbsp. sugar
1
stick butter melted
Filling:
1
can sweetened condensed milk
4
egg yolks
1/2
cup lemon or lime juice (or a mix of both)

Directions

Crust:

Preheat oven to 350 degrees.

Crush crackers until fine. Add melted butter and sugar, stir to combine.

Press into a 9-inch pie plate pressing up the sides of the pan.

Bake at 350 degrees for 16 minutes.

Filling:

Combine condensed milk and egg yolks until mixed together completely.

Add juice, stir to combine.

Pour into crust and bake for additional 16 minutes.

Chill pie before serving.

Serve with whipped cream (sea salt can be sprinkled on whipped cream) add a sprig of mint.
