Baked Pecan Pimento Cheese Chicken Tenders

These can be made a day ahead and baked when you get home for a quick week night meal that the whole family is sure to love. Use any pimento cheese or try one with jalapenos for a little kick.

Ingredients

lbs. chicken tenders
1
½ cups easy to spread pimento cheese, we used pepper jack pimento cheese
1
cup pecans
1/2
cup panko breadcrumbs
1/2
tsp. cayenne pepper
1/4
tsp. Salt and add to taste
Pepper to taste

Directions

Preheat oven to 375 degrees. Lightly grease a baking sheet and line with wax paper.

Season the chicken with salt and pepper. In a food processor, combine pecans, panko ¼ t. salt and cayenne, pulse until fine. Spread pimento cheese on each piece of chicken and roll in the pecan crumb mixture. Place on the baking sheet and bake for 20 minutes, until chicken is cooked through.
