Baked Sausage and Wild Rice Casserole

Talk about comfort food, this is it.  This dish smells great while it is baking and it could be a meal if you add a salad or a green vegetable.  It is also a great side dish and easy to travel with for family gatherings.

Ingredients

lb. bulk pork sausage
1
onion, chopped
1
small green pepper, chopped
4
ribs celery, chopped
1/4
lb. fresh mushrooms, thinly sliced (or 1 large can mushrooms, sliced)
6
oz. box Uncle Ben’s long grain wild rice mix, cooked according to package directions
4
oz. can pimentos, chopped and drained
1/2
tsp. thyme
1
can cream of mushroom soup
2
cups grated Monterey Jack cheese, divided

Directions

Preheat oven to 325 degrees.

Cook your rice and set aside.

Sauté the first 5 ingredients until the sausage is browned.

Remove from heat, (drain the grease) and add the remaining ingredients, reserving 1 cup of cheese for the topping.

Transfer to a 9 x 13 baking dish and bake for 30 minutes.

Top with remaining cheese and bake for an additional 10 minutes.
