Beef Wonton Bites

The NC Cattlemen’s Association shared this winning recipe as a perfect one bite appetizer that will delight any guest, www.nccattle.com.

Ingredients

Juice of 4 limes, divided

tsp. dried oregano leaves (preferable Mexican)
3
cloves garlic, rough chopped
1/2
tsp. salt
1
lb. skirt steak

refrigerated wonton wrappers
1/4
cup cilantro, chopped
1/4
cup onion, finely chopped
1
avocado, thinly sliced

Directions

Mix juice of three limes, oregano, garlic and salt together in a non-reactive baking dish or sealed plastic bag. Turn skirt steak in mixture to coat. Cover and refrigerate overnight, turning steak occasionally.

Preheat oven to 400 degrees. Remove skirt steak from marinade and let excess liquid drip off. Cook in grill pan until well done, approximately 8-10 minutes per side, depending on thickness.

While the meat cooks, press wonton wrappers into mini-muffin cups.

Once the meat is cooked to desired doneness, let the meat rest until cool enough to handle. Slice steak into strips approximately ½-inch wide, then cut into small bite size cubes. Spoon meat into wonton cups and bake about eight minutes or until wontons are golden brown.

Combine cilantro, onion and juice of one lime. Top each wonton cup with ½ -1 teaspoons of cilantro mixture. Garnish with sliced avocado and diced tomato.
