Berries in the clouds

Serve with an almond cookie or sprinkle a few graham cracker crumbs in the bottom of the cup. The perfect dessert for July 4th!

Ingredients

oz. mascarpone cheese

tbsp confectioners’ sugar

tsp lemon zest

tbsp fresh lemon juice

cup heavy cream

cups strawberries, sliced
4
cups blueberries
1/3
cup almond slices, toasted

Directions

Step 1

In a large bowl, beat cheese, 6 tbsp sugar, lemon zest and lemon juice until smooth.

Step 2

In another bowl, beat heavy cream until soft peaks form. Fold beaten cream into the mascarpone mixture.

Step 3

Place 1 cup strawberries and the remaining 2 tbsp sugar in a food processor and pulse, 1 to 2 minutes, until mixture is smooth. Transfer to a bowl and fold in remaining strawberries.

Step 4

Place half the blueberries in the bottom of 4 dessert bowls. Spoon the mascarpone mixture over the blueberries, dividing evenly.

Step 5

Top each with the strawberry mixture. Place remaining blueberries on top. Chill in refrigerator for 1 hour. Top with slivered almonds.
