Berry Cheese Blintz Bake

This recipe can be made throughout the year and you can change the topping seasonally.  Try a blueberry or peach sauce.  Just make sure you strain the mixture and discard the solids.

Ingredients

Batter:

cup orange juice

egg whites

½ cups (12 oz.) sour cream

cup all-purpose flour
1/2
cup sugar
1/4
cup butter, softened
2
tsp. baking powder
1
tsp. grated orange peel
1
tsp. vanilla extract
Dash of salt
Filling:
2
egg yolks
1
tsp. vanilla extract
2
cups (16 oz.) 4% cottage cheese
1
pkg. (8 oz.) cream cheese, softened
1/4
cup sugar
Topping:
2
cups fresh NC strawberries
3
tablespoons sugar
1
tablespoon lemon juice
Fresh, NC blueberries, optional

Directions

Batter:

Combine in a blender.  Cover and process until smooth.  Set aside 2 cups batter; pour remaining batter into a greased 13 X 9 inch baking dish.

Filling:

Combine the egg yolks, vanilla, cottage cheese, cream cheese and sugar in a blender.  Cover and process until smooth.  Spoon filling over batter; cut through with a knife to swirl.  Top with reserve better.  Bake, uncovered at 350 degrees for 40-45 minutes or until center is just set (mixture will jiggle).  Let stand for 10 minutes before cutting.

Topping:

For the topping, combine 2 cups of strawberries with 3 tablespoons of granulated sugar and 1 tablespoon lemon juice in a blender or food processor and blend until very smooth, about 2 minutes. Optional: Strain the mixture through a fine-mesh sieve into a measuring cup and discard the solids.  Serve with blintz bake.  Top with blueberries if desired.
