Blue Cheese Stuffed Pork Chops

This is a very easy and elegant meal.  Deborah Johnson, Executive Director for the NC Pork Council was nice enough to share this recipe, so you know it is good!

Ingredients

1/2
cup shredded carrot
1/4
cup chopped pecans
1/4
cup crumbled blue cheese
1
green onion, thinly sliced
1
tsp. Worchester sauce
4
butterflied pork chops

Directions

Mix the stuffing together in a bowl.

Salt and pepper the chops.

Spoon approximately ¼ cup of stuffing into each pocket and secure with toothpicks.

Grill on medium to medium-high heat for 40 minutes, turning halfway through cooking.  If cooking on an indoor grill you may need to tent the chops with aluminum foil while cooking.

Remove toothpicks and serve
