Butterscotch Pie

Bonnie Moore shared this recipe and it makes a beautiful pie, especially if you only make one pie and you pile the meringue up high.

Ingredients

Butterscotch Pie:
Makes 2 regular crusts or 1 deep dish

egg yolks

cups brown sugar

Tablespoons corn starch

1/2 cups canned milk
1/2
teaspoon salt

Tablespoons butter
4
teaspoons vanilla
Meringue:
6
egg whites
1
teaspoon vanilla
1/2
teaspoon cream of tartar
8
to 10 Tablespoons sugar

Directions

Butterscotch Pie:

Separate the eggs, yolks in small bowl and egg whites in mixing bowl for meringue.

Mix dry ingredients together: brown sugar, cornstarch, and salt in a medium sauce pan. Mix well. Add canned milk and heat over medium heat, stirring constantly.
Stir until mixture bubbles and cook one minute.
Remove from heat. Add a small amount of mixture to egg yolks and stir.
Add yolk mixture back to mixture in pan and cook one more minute.
Remove from heat and add butter and vanilla Stir until butter is melted.
Poor into baked pie shell

Meringue:

Whip egg whites, vanilla, cream of tartar until frothy. Add sugar one tablespoon at a time.
Form stiff peaks

Put meringue on pies and bake at 350 degree for 10-15 minutes. Keep an eye on it.
