Cranberry Muffins

Not too sweet and just enough tart. A great muffin to be enjoyed year-round. Some toasted NC pecans would be a nice addition.

Ingredients

cups chopped raw cranberries (coarsely chopped)
1/2
cup sugar

cups flour
1/2
tsp. salt
3
tsp. baking powder
1/4
cup sugar
1
egg
1
cup orange juice or milk
1/4
cup butter, melted

Directions

Preheat oven to 400 degrees.

Combine cranberries and ½ cup sugar.

Sift flour, measure and combine with salt, ¼ cup sugar and baking powder. Mix well.

Beat the egg, add the milk or orange juice to the egg and beat well, then add the butter.

Grease muffin tins or line with paper/foil liners.

Add liquid ingredients to dry ingredients and mix only until dry ingredients are just dampened.

Stir in cranberries to distribute only.

Quickly spoon batter into greased muffin tins or lined with paper.

Bake for 15 to 20 minutes or until browned and done.

Check muffins at 15 minutes.
