Cucumber and Onions in Vinegar

This is always a quick, fresh side dish for any meal.  My family likes to munch on this while I’m fixing supper too.  Also, if you have extra cucumbers this is a good way to use up a couple.

Cook Time: Prep Time: 15 minutes; Total Time: 2 hour and 15 minutes

Ingredients

cucumbers
1
onion
1/2
cup vinegar
Salt
Pepper

Directions

Wash your cucumbers, cut of the ends and peel or scrape down the length of them with a fork.  Slice and put in a bowl.

Add sliced onion if desired.

Add just enough vinegar to cover.

Add salt and pepper and let them sit covered for about 2 hours, refrigerate.
