Cucumber Pasta Salad

Perfect to take to any family function or large gathering. It’s easy and it feeds plenty.  You could add some other vegetables and grilled chicken to turn it into a meal.

Ingredients

cucumber, sliced thin, do not peel
1
small onion, sliced thin
1
cup sugar (can be reduced to 3/4 cup, according to taste)

teaspoon Accent
1
(4 oz.) jar pimento
1
cup vinegar
1
teaspoon garlic powder
3/4
cup vegetable oil
2
teaspoon parsley
3
teaspoon mustard
Salt and pepper to taste
1
16 oz. box bow tie or spiral noodles, cooked according to package directions

Directions

In a blender combine sugar, accent, pimento, garlic powder, vinegar vegetable oil, parsley, salt, pepper and mustard to make the dressing.

Mix the pasta, cucumber and onion in a large mixing bowl.

Add the dressing and toss.
