Curried Pumpkin Soup

Ingredients

½ cups apple, peeled and chopped

cup onion, chopped
1/4
cup dry sherry, apple juice or water
1
½ tsp. curry powder
1
can (15 oz.) pure pumpkin
1
can (14.5 oz.) reduced-sodium chicken broth
1/4
cup creamy peanut butter
3/4
tsp. salt
3/4
cup evaporated skimmed milk

Directions

In a large saucepan, combine apples, onion and juice over medium-high heat. Stir occasionally, until onion is soft and most of the liquid evaporates from the pan. Cook for about 8 minutes.

Add curry powder and stir until fragrant, about 30 seconds. Stir in pumpkin, broth, and peanut butter and salt. Cover pan, bring to a boil, reduce heat and simmer gently for about 10 minutes.

Stir in milk. Remove from heat to cool. Once the soup has cooled, puree with a submersible blender or pour mixture into a blender or food processor and blend smooth. Warm on the stove or in the microwave before serving.
