Elsa’s Wrap

This is a super quick and delicious kid friendly meal that Renee Chou’s daughter Elsa likes to make for dinner. We like the idea of re-using those leftovers too!

Ingredients

1/3 cup white or brown rice, cooked
1
½ cups chicken nuggets, cooked
4
(8-inch) Tortillas
1
1/3 cup Colby Jack cheese, shredded
Optional toppings: salsa, sour cream, lettuce, tomato

Directions

Cook or warm up left over rice. Cut the chicken nuggets into bite size pieces. In a small sauté pan, warm the tortillas on one side. Flip over and sprinkle with 1/3 cup cheese. Once it begins to melt, move to a plate and top with 1/3 cup rice. Top with chicken nuggets and fold.

*Add the optional toppings after the chicken before folding.
