Fire and Ice Salsa

This salsa is light and refreshing.  Leave the seeds in the jalapeno if you want to add a little heat. You can also add a little salt and pepper.  I also recommend trying it on fish, chicken, or pork.

Cook Time: Prep Time: 15 minutes; Total Time: 15 minutes plus 1 hour chilling

NC Ingredients: watermelon, green pepper, cilantro, green onion, jalapeno

Ingredients

cups seeded and chopped watermelon
1/2
cup green pepper, chopped

Tablespoons lime juice
1
Tablespoon chopped cilantro
1
Tablespoon green onion, chopped
2
Tablespoons jalapeno peppers, chopped

Directions

Combine ingredients; mix well and cover.

Refrigerate 1 hour or more.

Serve with chips.
