Fresh Apple Muffins

These muffins are great for breakfast or make a delicious snack. They are perfect to pack for trips or in a child’s lunchbox.  North Carolina grows a large variety of apples so use your favorite variety in these fresh apple muffins. You could also add a few chopped pecans or raisins.

Ingredients

cup shredded unpeeled apple (we used a Braeburn)
1/2
cup all-purpose flour
3/4
cup whole wheat flour

tsp. baking powder
1/2
tsp. salt
1/2
tsp. cinnamon
1/2
cup sugar
1/4
cup melted butter
1
egg, lightly beaten
1/3
cup milk

Directions

Preheat oven to 350.

Sift dry ingredients.

Add butter, sugar, milk, egg and apple. Stir just to moisten (batter should look lumpy).

Fill greased muffin tins about 2/3 full.

Bake at 350 degrees for 30 minutes or until done.
