Fresh Apple Preserves

These preserves are great on biscuits or toast but I like them on a cracker with brie cheese and a touch of honey for an appetizer. Remember, you control the sugar.

Servings: 3 – ½ pint jars

Ingredients

Tablespoon salt

small or 5 large NC Golden Delicious apples (8 cups)

Tablespoons lemon juice
1
gallon water
4
cups sugar

Directions

Dissolve salt in water in a large bowl and set aside.  Peel, core, and cut apples into ¼ inch thick wedges to make two quarts.  Place in salted water; let stand five minutes then drain. Sprinkle sugar over apple slices; stir gently.  Let stand for two hours.

Add lemon juice to apples and cook over medium heat for 30 to 35 minutes or until thickened, stirring often. Quickly spoon preserves into 3 – ½ pint sterilized jars, leaving ¼ inch head space and wiping the jar rims.  Cover once with metal lids, and screw on bands.  Then process in boiling water bath for 10 minutes.
