Gail’s Strawberry Pudding

Gail Austin of Four Oaks sent me this recipe and it was also a Recipe of the Week in the News and Observer many years ago.  This dessert is light, creamy and full of strawberry flavor! You could make fresh whipped cream if you prefer.

Ingredients

cups fresh sliced strawberries, divided
1/2
cup sugar
1
(3 oz.) box strawberry Jell-O

(3.4 oz.) boxes instant vanilla pudding
3
cups cold milk (use instead of amount on the box)
1
cup sour cream
1
(16 oz.) container of Cool Whip
1
(11 oz.) box vanilla wafers

Directions

In a large pot on medium heat, combine 4 cups of strawberries, sugar and strawberry Jell-O Cook just enough to dissolve the Jell-O, stirring constantly. Cool and put aside.

Mix the instant vanilla pudding and milk (not the amount on the box) with a whisk for 3-4 minutes. Add sour cream to the mixture, then fold in ¾ of the Cool Whip.

In a 9 x 13 dish, layer the vanilla wafers, pudding mixture and strawberry mixture. Repeat until all are used and then top with remaining Cool Whip.

Garnish with 1 cup of sliced strawberries.
