Granny’s Icebox Fruitcake

I have never made a fruitcake and this sounded like one I could pull off. Thank you Cindy Hereford from Archer Lodge for sending in your recipe.

Ingredients

12oz. can PET evaporated milk (not sweetened condensed!)

large marshmallows

cups total of fruit "add ins" (You choose how much you want of each of the following: candied fruits, raisins, NC pecans and sweetened grated coconut. My favorite is to use only coconut, raisins and pecans.)
1
box (13.5 oz.) graham cracker crumbs

Directions

Place marshmallows and evaporated milk in saucepan over low heat.  Heat until marshmallows are melted completely.  Transfer mixture to large mixing bowl.  Add in graham cracker crumbs and fruit, nuts and coconut.  Mix thoroughly and press mixture into a greased tube pan.  Refrigerate overnight.  Slice and enjoy.  Store cake in refrigerator.
