Grilled Apple Salad

Great combination of flavors and a perfect salad for colder weather.  I tend to eat fewer salads when the weather turns cooler but with the grilled apples, toasted pecans and bold dressing, this salad is perfect for fall and winter.

Ingredients

Salad:

cup pecan halves, toasted

Gala apples

(6 oz.) package baby spinach
1
(5 oz.) package spring mix
3
oz. extra-sharp white cheddar cheese, shaved
Salt and pepper to taste
Brown Sugar-Cider Vinaigrette
Brown Sugar-Cider Vinaigrette:
2/3
cup canola oil
1/3
cup apple cider vinegar
2
green onions, minced

Tablespoons light brown sugar
3
Tablespoons chopped fresh basil
1
Tablespoon Dijon mustard
1/2
tsp. dried crushed red pepper
1/4
tsp. salt
Whisk together all ingredients until blended.

Directions

Salad:

Coat the grill with olive oil or cooking spray.

Preheat the grill to a medium-high heat.

Cut the apples crosswise into ¼ inch thick rings. Grill apple rings, covered with grill lid, 2 to 3 minutes on each side or until crisp-tender.

Arrange the spinach, mixed greens on a plate and top with apples, cheese, and toasted pecans.

Season with salt and pepper and serve with the vinaigrette.

Brown Sugar-Cider Vinaigrette:

Whisk together all ingredients until blended.
