Heirloom Tomato Shrimp Wrap

The Pesto Mayonnaise could easily make 4 wraps or use it for other sandwiches or as a dip for vegetables, chicken or shrimp.

Ingredients

large Heirloom Tomato
1
package of large flatbread
1
avocado
8
to 12 medium sized shrimp
1
small red onion
2
leaves of Romaine lettuce
Pesto Mayonnaise:
1
cup mayonnaise
2
T fresh lemon juice
1/4
cup basil, chopped
1
T garlic, chopped
1
T Worcestershire Sauce
Salt and pepper

Directions

Place shrimp in a small bowl and drizzle with olive oil. Toss to coat and season with salt and pepper. Grill on medium-high heat for 3-4 minutes or until pink throughout, turning halfway through.

Lay flatbread on cutting board and spread 1 tablespoon of pesto mayonnaise leaving a ½ inch border. Place lettuce, tomato, avocado, onion and shrimp across the wrap and roll the wrap up.

Pesto Mayonnaise:

Combine all ingredients until smooth.
