Holiday Spinach Salad

Clare Sanders Turner from Belmont sent in this delicious salad that goes will with every kind of meat. The dressing makes plenty and the leftovers will keep in the refrigerator for up to 2 weeks.

Ingredients

Salad:

pound of raw spinach

to 8 chopped Spring onions (or 1 small red onion)

hard-boiled eggs, chopped

slices of crisp bacon, crumbled
salt and pepper to taste

to 8 fresh mushrooms, sliced
2
cans of drained Mandarin oranges
Dressing:

cups vegetable oil
1
1/4 cups sugar
1
tsp. dry mustard
1
tsp. onion juice (grated onion or found in the spice isle)

tsp. salt
2/3
cup cider vinegar

Directions

Mix all the salad ingredients together in a large salad bowl. Whisk together dressing ingredients and toss with the salad ingredients.
