Honey Mint Vinaigrette with fresh fruit

This fruit salad is full of flavor. The perfect side dish for dinner on a summer night.

NC Ingredients: Honey, watermelon, cantaloupe, honeydew, mint

Ingredients

cup watermelon diced
1
cup cantaloupe diced
1
cup honeydew diced
1/4
cup sherry vinegar
2
Tablespoons whole grain mustard
2
Tablespoons honey
1/4
cup chopped mint
1/4
cup olive oil
Salt and pepper to taste

Directions

In a bowl, combine watermelon, cantaloupe and honeydew.

In another bowl, whisk together vinegar, mustard, honey and mint in a mixing bowl.  Add olive oil in a thin stream, whisking to emulsify.  Season to taste with salt and pepper.  Serve over fruit salad.
