Lemon Dill Egg Salad

This egg salad is good with sliced tomatoes and lettuce leaves or a roll, croissant, or with tortilla chips. If you aren’t a fan of Ranch Dressing, make this egg salad with light mayonnaise.

Cook Time: Prep Time: 20 minutes; Total Time: 20 minutes plus 1 hour in refrigerator

NC Ingredients: eggs, green onions, celery, bacon, red pepper

Ingredients

hard cooked eggs, chopped
2
green onions, finely chopped
1
stalk celery, chopped

strips bacon, crisply cooked and crumbled
1/2
cup red bell pepper, chopped
1/2
tsp. lemon pepper
1
tsp. dried dill weed
1/2
tsp. black pepper
3/4
cup reduced fat ranch salad dressing

Directions

Toss all ingredients together and chill for at least one hour.
