Ingredients

3
tablespoons unsalted butter
3
tablespoons honey
1/4
cup orange juice
1/4
teaspoon cayenne pepper
4
medium sweet potatoes, peeled, halved crosswise and quartered lengthwise
Salt and freshly ground pepper to taste

Directions

Preheat oven to 400˚F.

In a small saucepan, melt the butter.  Whisk in the honey, orange juice and cayenne pepper.

Place the sweet potatoes in a lightly buttered 9×13-inch baking pan.  Pour the honey mixture over the sweet potatoes and toss well to coat them thoroughly. Arrange the sweet potatoes in a single layer, season with salt and pepper.

Roast until the sweet potatoes are browned, tender, and liquid is thick and bubbly, 45 to 55 minutes.  To ensure even roasting, stir and baste the sweet potatoes with the pan juices several times, especially toward the end of roasting time.  Serve immediately. Recipe makes 4 servings.
