Marinated Shrimp

You could double the marinade for this savory treat to make sure it all gets good and coated. Serve with some crackers.

Ingredients

Shrimp:
2
pounds shrimp, cooked and peeled
2
small lemons, peeled and sliced into rounds
1/2
cup black olives, sliced
1
medium red onion, sliced
Marinade:
3
Tbsp. red wine vinegar
3
Tbsp. lemon juice
1/3
cup chopped fresh parsley or 1 Tbsp. dried parsley
1
clove garlic, halved (put in toothpick for easy removal)
1
bay leaf
1
tsp. dry mustard
1
tsp. salt
1
tsp. dry basil

Directions

Shrimp:

Layer the ingredients in a medium bowl and cover.

Marinade:

Pour marinade over the shrimp mixture and refrigerate overnight.

Take out the garlic and serve!
