Ingredients

1
large ripe NC Tomato
1
Tablespoon mayonnaise (I use Duke’s light)
2
slices of fresh soft bread
Salt and Pepper

Directions

Peeling: Simply use a paring knife to gently go between the skin and the flesh of the tomato. Slice the tomato to your desired thickness.  Put mayo on each slice of bread.  Place one or two slices on your bread.  Salt and Pepper the tomato then cover with the other slice of bread.
