Open Faced Tomato Sandwich

This is a great recipe for breakfast. Just add some fruit with milk or coffee.  Or enjoy it for lunch with a salad.  I prefer Muenster cheese because it is so rich and creamy but try your favorite cheese, perhaps Colby or pepper jack to spice it up.

Ingredients

Bagels or English muffins
NC Tomatoes – whole or Roma
Mayonnaise
Muenster Cheese

Directions

Put a little mayo on your choice of bread.  Peel and slice your tomatoes and add as many as you prefer.  Add salt and pepper.  Then top with slices of Muenster cheese.  Put under the broiler until the cheese is melted.
