Peanut Slaw

This recipe comes from a very old cookbook and not all recipes turn out as you would expect. This slaw is unique and different.

Ingredients

cups green cabbage, shredded
1
cup red cabbage, shredded
1
cup celery, chopped
1
cup mayonnaise
1
tsp. sugar
1
tsp. salt
1/2
tsp. black pepper
1
Tbsp. butter, melted
1
cup dry-roasted peanuts
2
Tbsp. grated Parmesan cheese

Directions

Mix together the first 7 ingredients, and place in a shallow dish. Then in a saucepan, combine the butter and peanuts, stirring for 3-5 minutes. Sprinkle cheese over peanuts and heat for an additional 30 seconds. Sprinkle topping over slaw just before serving.
