Poke Salad

Ahi Tuna can be a raw yellowfin tuna that is sushi grade. Poke is diced raw fish served either as an appetizer or as a main course and is one of the main dishes of Native Hawaiian cuisine.

Cook Time: Prep Time: 20 minutes; Total Time: 20 minutes (1 hour marinate)

Ingredients

¼ lbs. ahi tuna, cut into ½ inch cubes
1
large orange, cut into ½ inch sections
1
pink grapefruit, cut into ½ inch sections
1
cucumber, seeds removed and sliced into half rounds
1/4
cup green onion, sliced thin
1
tsp. fresh ginger, grated
1
1/2 tsp. sesame oil
1
tsp. rice vinegar
1/4
cup soy sauce
1
tsp. fresh lemon juice
1
tsp. mirin
1/2
tsp. crushed red pepper flakes
Salt to taste
1/2
cup Jasmine rice cooked and cooled
2
cups lettuce, chopped
2
Tbsp. cilantro leaves for garnish (optional)

Directions

Combine the first 12 ingredients in a mixing bowl.

Cover and refrigerate at least one hour, for the flavors to come together. Add salt if needed.

Arrange rice in bowls, top with lettuce, spoon the ahi poke on top and garnish with the cilantro.
