Roasted Sweet Potatoes

This dish would be perfect to take tailgating because it makes so much and would travel well. A delicious sweet and savory treat before the football game.

Ingredients

sweet potatoes, peeled and cubed

Tablespoons olive oil

Tablespoons balsamic vinegar
1/2
cup raisins
1
cup sweet onion, finely chopped
1/4
cup honey butter
1/2
cup pecans, chopped
1
Tablespoon thyme, chopped
Salt and pepper

Directions

Preheat oven to 350 degrees. Toss sweet potatoes with olive oil, balsamic vinegar, salt and pepper, raisins and onion. Spread sweet potato mixture in a single layer 12 x 16 inch rimmed baking sheet. In a small sauce pan over medium heat, melt butter. Add pecans and thyme and stir until fragrant, about 3-5 minutes. Top potatoes with pecan mixture, cover with aluminum foil and bake for 50-60 minutes or until potatoes are tender.
