Salad Cake

This cake surprised even me! You replace the oil and water with dense vegetables and they practically disappear.  Serve this rich dark chocolate creation to your guests but don’t tell them it’s packed with veggies until after they have tasted it.

Ingredients

Dark Chocolate Cake Mix

eggs
1
large carrot (skin on, just washed well)
1
celery stalk
1
small yellow squash (skin on, and washed)
1
small zucchini (skin on, washed)
1
medium apple (skin on, washed)
1
tsp. vanilla extract
2
extra-large Dark Chocolate Hershey bars

Directions

Shred all the vegetables and place them in a large bowl.  Add eggs, vanilla and cake mix.

Spray 6 (6 ounce) ramekins with cooking spray.  Pour the cake mixture into the dishes and bake at 350 degrees for approximately 40 minutes.  You may have to bake them a little longer depending on the moisture in the vegetables.  Continue to bake until knife comes out clean. These cakes need to be completely dry throughout. The knife needs to come out clean or with dry crumbs on it.

Allow cakes to cool for 5-10 minutes before turning out onto a plate or tray.

Place Hershey bars onto cakes to melt or melt the chocolate in the microwave and pour over the cakes. You may need to spread them with a knife or spatula.  Let the chocolate spread down the sides of the cake.

Serve immediately or refrigerate.
