Sausage and Potato Egg Casserole

This recipe comes from our Local Dish photographer, Tom Normanly. This casserole is perfect for a weeknight dinner with a salad. I recommend adding some salsa as a topping.

Ingredients

lb. sausage
1
medium onion, chopped
2
cup potatoes, chopped (can be frozen potatoes)
1
tsp oregano
1
tsp sage
1
tsp thyme
Salt and pepper, decent pinch of each

eggs
1/2
cup Bisquick
1/3
cup milk
1
1/2 cups grated cheddar

Directions

Preheat to 400.

  1. Brown sausage with onions, spices and a pinch of salt and pepper.
  2. Remove sausage from pan and drain. Sauté the potatoes until they’re done and a little crispy on the edges.
  3. Combine potatoes, meat mixture and 1 cup of cheese.
  4. In another bowl, mix Bisquick with eggs, milk and a pinch of salt and pepper.
  5. Pour the meat/potato mixture into an 8×8 casserole dish. Pour the egg mixture on top of that.
  6. Bake for 40 minutes. Add remaining cheese. Bake a couple more minutes until the cheese melts.

*Don’t use a 9×13 casserole dish. This casserole is better when it’s thicker, in an 8×8 dish
