Shrimp and Avocado Sandwich

You can also add red onion to this sandwich or drizzle it with a balsamic glaze.

Ingredients

slices of Tomato
1/2
cup arugula or spring herb mix
4
slices of thick bacon, cooked (reserve drippings)
1/2
lb. peeled, medium-size shrimp, deveined
3/4
tsp. salt
1/4
tsp. fresh ground black pepper

Tbsp. fresh lemon juice
2
slices of thick bread, toasted
1
clove garlic, crushed
3
Tbsp. mayonnaise
1
avocado, peeled and sliced
2
Tbsp. fresh dill, chopped

Directions

Combine mayonnaise and garlic and set aside. In a frying pan over medium-high heat, combine bacon drippings and ½ tsp. salt. Cook shrimp for 2 minutes on each side or until bright pink. Remove from heat; stir in pepper and 2 Tbsp. lemon juice

Spread each slice of bread with mayonnaise-garlic mixture. Top with bacon, arugula, tomato, avocado and shrimp mixture. Sprinkle with dill and serve.
