Spaghetti Squash (two-ways)

This recipe was created using half of the squash. To make the sweet or savory recipe for 1 spaghetti squash, you may want to increase slightly or double the ingredients.  Spaghetti squash is an easy side dish because you simply roast it in the oven and then toss it with your ingredients.

Ingredients

spaghetti squash

Tablespoons butter (1 Tablespoon softened/ 1 Tablespoon cold)

Tablespoons light brown sugar
1
Tablespoon Extra virgin olive oil
Salt and pepper
Marinara sauce

Directions

Preheat oven to 450 degrees.

Split squash in half and scrape out seeds.

Line a large baking dish with aluminum foil.

For sweet spaghetti squash: generously spread softened butter over the flesh side of the squash. Place flesh side down and roast for 30 minutes. Flip the squash over and put the cold butter and brown sugar in the cavity of the squash and continue roasting 10 more minutes. Spoon the flesh out, toss and serve.

For savory spaghetti squash: Season the flesh side of the squash with olive oil, salt and pepper. Place flesh side down and roast for 30 to 40 minutes or until the outer shell is soft. Let rest until cool enough to handle. Warm the marinara sauce. Spoon the flesh out and toss with the marinara sauce and serve.
