Special K Ice Cream Cake – Joe Fisher

Joe Fisher shared his family’s celebration cake. They use walnuts instead of pecans, but it is delicious either way. If you want to get fancy, add a chocolate, caramel and walnut or pecan topping.

Ingredients

cups Special K cereal
1/2
cup butter, melted
1/2
cup brown sugar
1/2
cup chopped pecans
1/2
gallon vanilla ice cream
1
jar (11.5 oz.) chocolate ice cream topping
1
jar (11.5 oz.) caramel ice cream topping

Directions

In a large bowl, combine the first 4 ingredients and press ¾ of the mixture into a 9 x 13 baking dish. Cut the ice cream into 6 equal slices and place over the crunchy cereal crust.

Spoon ice cream toppings over the ice cream. Then top with the remaining cereal mixture.
