Strawberry Bruschetta

My cousin in-law Sarah sent me this recipe last year.  It is a fresh and sweet alternative to bruschetta. I prefer a little more balsamic vinegar and fresh mint instead of basil.

Ingredients

crusty Italian roll cut into 12 slices
1
pint of fresh strawberries, hulled and chopped
1/2
small red onion, chopped
2
T. fresh basil leaves, chopped
2
t. balsamic vinegar
1
t. sugar/Splenda
1
t. olive oil
1/4
t. salt

Directions

Preheat oven to 350. 

Cook bread slices for 8-10 min. turning 1 time half way through.

Mix remaining ingredients together and refrigerate.

Top 1 T on toast.
