Sweet Potato and Apple Soup

Garnish soup with fresh cracked black pepper and toasted pecans.  You can make this soup thick and creamy or thin depending on the amount of milk you add.  Also, for a delicious twist, turn this recipe into mashed sweet potato and apples by only using 1 cup of heavy cream and no milk.

Ingredients

pound sweet potatoes, peeled and chopped
1/2
pound apples, peeled and chopped
1
stick butter
2
cups heavy cream
2
sprig fresh rosemary
1/2
cup milk
Salt
Black Pepper

Directions

Combine the sweet potatoes and apples in a large pot and cover with salted water, bring to a boil. Boil 10-15 minutes until well cooked, drain. Heat butter, cream, milk, and rosemary until it comes to a simmer.  Pour the butter/cream mixture over the sweet potato/apple mixture and mix with a submersible blender until desired consistency. Season with salt and pepper.
