Sweet potato breakfast casserole

This casserole is filled with flavor and lots of NC grown ingredients. Thanks to Christi Broadway of Raleigh for entering this dish in the NC State Fair sweet potato competition.

NC Ingredients: Sweet potatoes, sausage, green pepper, red pepper, eggs

Ingredients

medium sweet potatoes (approx. 2 – 2 ½ cups), peeled
1
lb. Italian sausage or breakfast sausage
1
green pepper, diced
1
red pepper, diced
6
eggs
½
cup milk
1
tsp. garlic powder
1
tsp. onion powder
salt and pepper to taste

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

Cook and crumble sausage. Drain excess grease and set aside.

Step 3

Cube sweet potatoes into bite sized pieces and cook in some cooking oil in a skillet until soft, about 15 minutes.

Step 4

Combine the sausage, sweet potatoes, and peppers, and pour evenly into a 9×13 baking dish.

Step 5

In a bowl, whisk together eggs, milk, salt and pepper (a few shakes of each), garlic powder, and onion powder. Pour evenly over sausage mixture.

Step 6

Bake casserole for 45 minutes, or until the eggs are cooked throughout.
