Sweet Potato Muffins

Lee Farms shared this recipe with me and they are located in Four Oaks. These muffins are perfect for breakfast, brunch or lunch. Brian thinks they would also make a great dessert; just add some cream cheese icing.

1
¼ cups sweet potatoes (cooked and mashed)
1
cup milk
2
½ cups self-rising flour
1
tsp. cinnamon
1/4
tsp. nutmeg
1/2

Bake at 375 degrees for 10-15 minutes. For regular size muffins, bake for 15-20 minutes. Recipe makes 18 regular size muffins.
