Sweet potato pudding

Ann Farrell, a dear relative from the Bullock side of my family and a member of the Golden Age Club in Apex was sweet enough to share this recipe with me. She says that it is a favorite of her family, especially her great grandson.

Ingredients

For the Pudding:

cups cooked sweet potatoes
1/2
cup sugar
2
eggs
1
can sweetened condensed milk
1/2
cup margarine or butter, melted
1
tsp vanilla
1/2
tsp cinnamon
For the topping:
1
cup packed brown sugar
1
cup pecans, chopped
1/3
cup butter, softened
1/2
cup flour

Directions

Step 1

Mix the pudding ingredients. Then combine topping ingredients with a fork in a separate bowl.

Step 2

Spray a 9 x 13 baking dish with cooking spray. Pour pudding ingredients into your dish and sprinkle the topping on top. Bake at 350 degrees for 30 minutes or until set.
