Thai Peanut Salad

With all the fresh NC Vegetables coming into season, this salad is perfect for the summer and it’s great if you are a vegetarian. Priti Amin won the blue ribbon at the 2011 NC State Fair in the NC Peanut Growers Pea-nutty Vegetarian recipe contest.  They are sponsoring another contest this year at the fair but with a new theme. NC Ingredients: Peanuts, lettuces, tomatoes, peppers, Edemame, cilantro, basil, honey

Ingredients

Salad:
1/2
Bag of Spring Mix (Romaine lettuce, Tango & Radicchio)—OR ½ bag of Romaine lettuce can also do
1/2
Bag of Baby Spinach
6
ounces cherry tomatoes cut in halves
1
small red onion, diced
1
avocado, diced
1
red and green bell pepper cut length wise
1/2
cucumber or English cucumber, diced
1/2
Cup Plain roasted peanuts halved (unsalted roasted)
1/2
box of extra firm Tofu, diced (about ¾ cup)
1/2
cup Edemame (steamed)
Dressing:
1
cup cilantro, chopped
1/4
cup fresh basil leaves, chopped
1/2
cup olive oil
1/4
cup Red wine vinegar or Plain vinegar
2
Tablespoon fresh lime juice
Pinch of salt
1
Tablespoon Honey
1
Tablespoon Parmesan Cheese

Directions

Salad:

Mix all salad greens in a tray & pour over the dressing and toss well.

Add the roasted peanuts and toss again. You can also add toasted sesame seeds.

Do a taste-test. If you prefer it sweeter, add a little more honey in your dressing. If too salty or sweet, add more lime juice. Add chili flakes if you like it spicy.

Serve right in the salad bowl or portion out into individual bowls, and ENJOY!

Dressing:

Blend to a fine liquid consistency (Tip: double the salad dressing recipe and keep any extra in the refrigerator for a quick & scrumptious tossed salad anytime!)
