Tomato and Cucumber Salad

This is a cold crisp side dish that is quick and easy.  If you don’t have scallions, then use a little purple onion.  This is a great addition to any meal and so easy!

Ingredients

cups diced NC Tomatoes (whole, Roma, Cherry or Grape)
1
cup diced cucumbers peeled
1/4
cup sliced scallions
1/2
cup mayonnaise
2
Tablespoons sugar
2
Tablespoons red wine vinegar

Directions

Combine your tomatoes, cucumbers and scallions.  Mix your mayonnaise, sugar and red wine vinegar until the sugar is dissolved.  Pour over your vegetables to coat and refrigerate for at least 15 minutes.  Stir before serving.
