Vanilla Wafer Cake

This cake can be served for breakfast or dessert.  If you are a fan of coconut, this is the cake for you because the texture of the cake allows the coconut texture and flavor to really come through.

Cook Time: Prep Time: 20 minutes; Total Time: 1 hour, 20 minutes plus 2 hours cooling 40 minutes

Ingredients

sticks butter, room temperature

cups sugar

eggs
1/2
cup milk
1
(12 oz.) pkg. vanilla wafers finely crushed
7
oz. coconut
1
cup pecans, chopped
1
tsp. vanilla

Directions

Preheat oven to 350 degrees. Cream butter and sugar together until fluffy.  Add eggs, one at a time, beating after each addition. Add milk and blend. Add vanilla wafer crumbs, nuts and coconut. Beat in vanilla. Pour into greased and floured 10 inch Bundt or tube pan. Bake for 1 hour and 15 minutes. Cool in pan for 2 hours, turn out onto cooling rack and allow to cool completely.
