Vegetable Slaw
This is good and very fresh but for me, I would need to add just a little salt and pepper Also, a vinaigrette of lemon juice and light olive oil would give it a nice flavor.

Ingredients

yellow pepper, julienne

red pepper, julienne

cucumber, skin julienne only
1/2
red onion, julienne
1/4
cup cilantro, chopped
1/4
cup frozen edamame (soybeans) cooked & cooled according to package directions.
Directions
Combine all ingredients.
