Watermelon Cooler

This is a cool and refreshing drink that is perfect for an outdoor celebration.  You could also make it with NC cantaloupe, honeydew or a Sprite melon.

Ingredients

cups seedless watermelon, cubed

cup ginger ale
1/2
cup water

teaspoons lime juice (about 2 large limes)

teaspoons sugar

mint leaves, torn, plus more for garnish

Directions

Process the watermelon in a blender until smooth, stopping to scrape down the sides as needed.

Pour mixture through a fine wire-mesh strainer into a pitcher, discarding the solids.

Stir in the ginger ale, water, lime juice, sugar and mint leaves.

Cover and chill until ready to serve.

Serve over ice and garnish with mint or lime wedge.
