Western Egg Casserole

A breakfast casserole isn’t just for the holidays. Fix it the night before and enjoy breakfast for dinner.  Add some fruit or a salad and you have a delicious meal for the family.  Then enjoy the leftovers for breakfast the next morning.

Cook Time: Prep Time: 15 minutes; Total Time: 45 minutes plus 8 hour chilling

Ingredients

lb. diced ham
6
green onions, sliced
1/4
cup green pepper, diced
1/4
cup red pepper, diced
1/2
pt. grape tomatoes, sliced in half

¼ cups Parmesan cheese, shredded
1
tsp. salt
3
cups milk
1/2
cup heavy cream
5
large eggs, lightly beaten
2
tubes (8 oz.) Crescent rolls, baked and cooled
8
oz. Gruyere cheese, shredded
6
slices of bacon, cooked (optional)

Directions

Toss together ham, Parmesan cheese, salt, green onions, peppers and crescents; arrange in a 13 x 9 inch baking dish coated with cooking spray. Whisk together milk, heavy cream and eggs; pour over ham mixture. Cover and chill 8 hours. Preheat oven to 350 degrees. Uncover casserole, sprinkle with grape tomatoes and Gruyere cheese. Bake 45 minutes or until golden brown. Optional: Garnish with bacon and serve with sour cream, salsa and sliced avocado.
