Zesty Sweet Potato and Tomato Soup

This soup is perfect year round.  Enjoy it warm when the weather is cool and then chill this soup when the weather is warm. Serve with croutons or a grilled cheese sandwich.

Ingredients

TBSP. olive oil
1/2
onion, chopped
2
tsp. garlic, minced
1
(14.5 oz.) can fire roasted diced tomatoes
1
(12 oz.) jar roasted red peppers, drained and chopped
1
½ cups pureed sweet potato
2
cups water
2
chicken bouillon cubes
2
tsp. dried basil
1/2
cup whole milk
2
TBSP. sugar
Salt and pepper to taste

Directions

In a large pot, simmer olive oil, onion and garlic for about 5 minutes.  Add tomatoes, peppers, sweet potatoes, water, bouillon and dried basil.  Simmer for 25 minutes on medium-high heat.  Pour contents into a blender and puree until smooth or use a submersible blender in the pot.  Pour mixture back into pot (if using the blender) and add milk and sugar. Stir to combine and season with salt and pepper.
